TACO TUESDAY are a thing in our house!!! Just like Lebron James (See video at the end of the page)I was also craving for something a little for fresh, but I did not want BORNING!!! Taco salad is exactly what you need!
- Fried Corn Tortillas Chips ready in 10 minutes!!!!
- Fresh Guacamole (A must on #tacotuesday
- Avocado salad dressing ( yas! yas ! yas!)
Prep : 15 mins /Cook : 35 mins/ Chill : 2-4 h Total: 2h50 mins
Servings : 2-4
1 pound of ground beef
2-3 tbsp homemade epis
1 small yellow onion, chopped
2 tsp lemon pepper
1/2 tsp salt
1 tsp lemon juice
1/2 Taco seasoning pack
salt & pepper to taste
2 tbsp olive oil
2 cups Romaine leaves, washed and dried, chopped
1/2 large cucumber diced
1 red onion sliced
1-2 avocados, sliced
1 yellow, red or orange bell pepper, chopped
6-8 cocktail tomatoes, diced
1/3 cup black olives), sliced (optional)
1/4 block cheese, shredded
Marinate the Ground beef:
In a bowl combine all the ingredients , cover the bowl with plastic wrap and add to the fridge for at least 30 minutes or upto 4h.
When ready to cook, simply heat up a league frying pan over medium-high heat , with 2 tbsp of olive oil, and cook the ground beef mix until browned.
Create the salad:
In a larger bowl add the lettuce, cucumber, red onion, bell pepper, tomatoes, and avocado together.
Finish the salad:
Add the salad dressing and guacamole and tortillas chips (think of them as croutons)
Add the crumbled cheese (Optional) to the salad and mix.
Serve with the ground beef over the salad.
